Ideal location for those with a love of French-Belgian cuisine. Chef Bolle manages to give grandma’s cooking a surprisingly modern twist. 


Favourite regional product of the chef? 

My favourite regional product is the shrimp because it is so versatile. The fresh Flemish shrimp is a grey shrimp which is caught along the Belgian coast. No preservatives are added during its processing. The special taste is due to its freshness and the typical method of preparation. Within 24 hours of being caught these shrimps are cooked in seawater, thus preserving the crunchiness. 

Favourite beer? 

Lager, or what we in Flanders call a ‘pintje’. This type of beer is fermented at low temperatures and has an alcohol percentage of about 5%. A great many breweries in Belgium produce this sort of beer, the most famous being Maes, Jupiler and Stella Artois. 

Your favourite restaurant? 

La Paix* in Brussels. 

What is your favourite place in Flanders? 

The coast.

As the name suggests, ‘Steendam 66’ bistro is located in that very street, in a historic, tall building within the old city zone around Ghent, a stone’s throw from the centre. There the chef reveals his culinary secrets - while you sit and enjoy an aperitif or a good glass of wine, you can watch him at work in his open kitchen.
