If you’re looking for seasonal local cuisine, Stef Vervoort is the man for you! He favours products “from his doorstep” but is not afraid of combining them with Mediterranean ingredients. As a chef he aims for the feel good factor and it shows!
What is your favourite regional product?
My favourite regional product is Junior Beef from Kortrijk-Dutsel, on the outskirts of Leuven. This is because farmer/breeder/butcher Jos Theys creates a very special meat using special feed (based on milk and grain) & humane rearing, combining fantastic flavour with the health benefits of veal. The specially adapted feed may also create a smaller foodprint than the average cow.
Favourite beer?
Duvel, a Belgian top fermentation blonde special beer with an alcohol percentage of 8.5%. It is brewed in Breendonk near Puurs.
Your favourite restaurant?
De Schone van Boskoop (Boechout near Antwerp). As a leading chef, Wouter Keersmaekers has been a pioneer of Flemish regional products (including those that have fallen from favour) from the very beginning & a true inspiration. We were very proud to welcome him as guest chef in our kitchen.
